Marrow Detroit Provisions to open new shop and restaurant in Eastern Market

The smell of late winter rain and charcoal-grilled meats filled the air in Eastern Market Tuesday morning as owners of Marrow Detroit Provisions announced plans for their latest venture, tentatively titled Marrow in the Market.

Set to debut in 2025 at 2442 Riopelle, the project will be a classic butcher shop, a second-floor restaurant, processing facility and a research and development center for future Marrow products. Marrow in the Market will occupy a 14,000-square-foot historic building built in 1909 with a second floor added in 1916. It was more recently Capital Poultry.

CEO and founder Ping Ho said she's really proud that she and her team are going to have a home in Eastern Market and she's excited to continue the legacy of meat processing and meat packing in this space.

"As we all know Eastern Market has such a rich legacy and history of being one of the oldest outdoor markets in the country and still in operation. There are distilleries, there are meat-packing businesses, food-production businesses still in operation and we're so proud to be a part of that today," she said at Tuesday's media preview, where Detroit Mayor Mike Duggan and CEO of Eastern Market Partnership Dan Carmody also spoke, and Ho and chef Sarah Welch were recognized with a Spirit of Detroit award.

"Since we launched Marrow in 2018, our philosophy and our mission have always been about supporting and developing a local food system in partnership with our farms and local vendors. This mission continues with our project," Ho said on Tuesday. "And one of our priorities is also to promote a short supply chain, purchasing from our local farmers, knowing their practices, supporting their practices. Practices that honor the land and the animal."

Naturally, the restaurant will feature Marrow products and other local ingredients. Helmed by Marrow executive chef and partner Welch, a nationally recognized culinary professional and leader, the restaurant will have a bar and private event space, and also focus on educational events.

Marrow Detroit Provisions launched in the spring 2023 from the West Village butcher shop and restaurant. In addition to the original Kercheval location near Van Dyke in Detroit, Marrow Detroit Provisions sells at Eastern Market on Saturdays and at Birmingham’s Farmers Market on select Sundays. Marrow’s line of sausages are also sold at stores across Metro Detroit.

Last month, Marrow Detroit Provisions announced it would open a fast-casual cafe and butcher shop in Birmingham. That's set to debut this spring at 283 Hamilton Row.
